Crostini Recipe

INGREDIENTS:

8 slices bread
1 garlic clove
1 cup ricotta
Zest of 1 lemon
Olive oil
Sea salt
1 yellow squash
1 zucchini
8 slices prosciutto
¼ cup torn mint leaves
Seeds from ½ pomegranate

INSTRUCTIONS:

Brush sliced bread with olive oil and place on baking sheet. Bake at 450°F for roughly 3 minutes per side until golden brown. Rub with smashed garlic. Season ricotta with lemon zest, 1 tablespoon olive oil and dash of sea salt. Spread mixture on toast and top with thinly sliced squash and zucchini, prosciutto and pomegranate seeds. Drizzle with olive oil and salt to taste. Garnish with mint.
